Sideways

Sideways is a 2004 movie starring Paul Giamatti and Thomas Haden Church. It follows the characters Miles and Jack as they spend Jack's last weekend as a bachelor wine tasting.

And it's constantly evolving and gaining complexity. That is, until it peaks, like your '61. And then it begins its steady, inevitable decline.
