Well, to get the full experience I would say watch them all. While Part 8 sucks as a whole, it has some cool moments in it. If you want a "good" stopping point, then I would probably watch 1, 2, 3, 4, and 6. The films for 4, 5, and 6 are part of a Tommy Jarvis trilogy story, but you can theoretically skip part 5 and not be missing anything terrible. Part 7 is also kind of fun.
